Planning Your Weekend in CT? Hard Cider Tasting is the Hidden Gem You’ve Been Looking For

The Connecticut Hard Cider Scene and Cideries

Connecticut’s hard cider scene has grown into a diverse community of craft producers who mix tradition with innovation. The state’s 260 orchards, 60+ apple varieties, and unique New England climate provide the perfect playground for cideries to create distinctive flavors that show off the local apples.

At our Portland, CT winery, Arrigoni proudly sources apples from the orchards located just across the street. Every sip of our cider reflects the richness of the land, the quality of the produce, and the creativity we bring to every batch.

For Arrigoni and our cidery neighbors, the CT cider scene is very special because of the connection to local agriculture. By maintaining a close relationship with nearby orchards, we ensure quality ingredients while supporting the state’s farming heritage.

From Local Apples to Hard Cider: How It All Started For Us

CT apples on an apple tree.

CT Apples from Across the Street: Gotta’s Farm and Cider Mill

The journey of our hard cider begins just across the street at a  family-owned orchard that’s been growing apples in Connecticut for over 5 generations. We couldn’t have asked for a better stroke of luck than having access to fresh, locally grown apples within walking distance of our cidery. The short distance between orchard and press means our apples travel minimal food miles, maintaining freshness and reducing environmental impact.

Our Hard Cider Making Process

Fermentation and Flavor Development
We use the old school, traditional cider-making process which starts with crushing the apples to extract the juices. We then place the juices in a vessel for primary fermentation that uses wild yeasts naturally present in the apples. This can take several weeks.

The secondary fermentation takes place in another vessel where it undergoes further maturation, this is the period when the mellow and complex flavors develop. This can take a few weeks to several months.

Our making process has minimal intervention, meaning minimal added sugar, flavoring, or processing steps. We use wooden barrels for aging and maturation which allows the ciders to breathe and develop distinct flavors.

Sustainability in Production
We proudly practice sustainability in our cider production. We use locally sourced apples and repurpose the apple pumice for composting, keeping waste to a minimum. We also cut back on plastic by offering refillable growlers, and because our ciders are sold directly on-site, there’s very little transportation involved.

Hards Ciders on Tap or Bottled

Our hard cider on tap is poured fresh from a keg and has a crisper, more effervescent taste. It’s usually served cold and consumed soon after production, keeping the flavor lively.

Our bottled hard cider is packaged for a longer shelf life. It may be slightly less carbonated and can vary more in flavor. Want some cider to take home? We’ve got glass cider growlers to go in 32 or 64 oz.

Hard Cider is So Easy to Love: Here’s What You Need to Know

Two hard ciders side by side in a vineyard background.

Hard Cider vs. Cider in CT

The terminology can get confusing between “cider” and “hard cider,” and it is location specific. In Europe, “cider” exclusively means the alcoholic beverage, with the non-alcoholic version simply called “apple juice.”

Generally, when Americans want to specify the alcoholic version, we use the term “hard cider.” This fermented drink contains alcohol content typically ranging from 4% to 7% ABV, similar to beer. We use “cider” when referring to the fresh, unfiltered apple juice found at farm stands and grocery stores during the fall. But there is no standard definition in the U.S., leading to some ambiguity in its usage.

When you’re in CT, it’s important to know how the terms are used locally in the growing cider scene. Here, both “cider” and “hard cider” are used to refer to the alcoholic beverage. So when you see “cider tasting” advertised at local orchards and craft beverage producers, they’re inviting you to sample alcoholic hard cider, not sweet apple juice.

Hard Cider vs. Beer

Cider is made from fermented apples and offers a naturally sweet or tart taste profile and typically contains more sugar and calories than beer. Ciders are naturally gluten-free, making it a good option for those with gluten sensitivities. From various apple varieties, a whole spectrum of flavors can be created. The taste can range from sweet to dry, still to sparkling, and clear to cloudy.

Beer is brewed from malted grains, typically barley and hops, and has a lower sugar content. Beer appeals to those who enjoy a more grounded drink with grains and hops.

Alcohol Content

Alcohol content can vary between 4.5% to 7% ABV per drink. But some craft ciders, like our bottled ciders, pack a bigger punch at 11% ABV, so don’t let it sneak up on you.

Does Hard Cider Go Bad? Does it Need Refrigeration?

Eventually, hard cider will go bad, but bottled cider usually has a long shelf life. Once opened, ciders start to lose their flavor and fizz after a few days.

You should absolutely refrigerate ciders. Once opened, keep it in the fridge. If it’s fresh or unpasteurized, it should be kept cold even before opening.

Taste Hard Cider Like a Pro

We’re all about making sure you have a great time. For those who love learning more about what’s in the glass, we’ve put together some pro facts and tips to step up your hard cider tasting.

1. Our tulip glass isn’t just for looks—it helps concentrate the cider’s aroma and guides it to your nose, elevating each sip. Since aroma influences how we taste, it’s an important part of the cider experience.

2. For the best flavor, chill your cider in the fridge for a few hours before serving.

Avoid over-chilling, as it can mute the more delicate notes. Dry ciders are ideal at 45–50°F, while sweet ciders taste best around 40–45°F.

3.
Before taking a sip, start by observing the cider’s appearance—look at the color, clarity, and carbonation.

Cider colors can range from pale yellow to rich amber. Some are crystal clear, while others appear cloudy due to filtration. Take a moment to notice the bubbles too—fine bubbles may indicate natural carbonation.

4. Aromas are so important when tasting hard cider, so swirl the glass and inhale deeply. See if you can identify certain smells like apples, pears, or other floral notes.

5. Taste with all these observations in mind. Take a small sip and notice the immediate flavors. How does it feel in your mouth, and what is the aftertaste?

A Deep Dive into Sparkling Wines: Beyond Summer Sipping at CT Winery

Hello, sunshine! Warmer days are here in Portland, Connecticut, and that means it’s prime time for sparkling wine. Picture this: a well-deserved weekend, a few good friends, and a chilled glass of bubbly — pure joy!

But sparkling wine isn’t just for sunny days and special toasts; its bright flavors and refreshing sparkle make it perfect for any time of the year. Here at Arrigoni Winery, we’re not just fans; we make the stuff! So we’re here to share why we love it so much and why you will too.

A Sparkling Wine Breakdown: How It’s Made and the Different Types

Sparkling wine is a wine with significant levels of carbon dioxide which makes it fizzy. They are usually white or rosé with sweetness ranging from very dry (brut ) styles to sweeter (doux) varieties.

How It's Made

The most notable quality of sparkling wines is the need for two fermentations. The first fermentation is to make the wine and the second is to make the bubbles. There are several methods for production but the most popular ones are the traditional and tank methods.

Traditional Method

The traditional method is widely appreciated, and it is the method for making Champagne. With this method, the transformation from still to sparkling wine happens inside the bottle.

1. It begins when the grapes are picked at a slightly younger age to
preserve acidity; high sugar levels are not ideal for sparkling wines. It is
then fermented into dry wine, the first fermentation is complete, and we
now have a base wine.

2. It’s time for tirage. Tirage is when some sugar and yeast, called liqueur
de tirage, is added to the base wine in the bottle to start the second
fermentation.

3. The second fermentation happens inside the bottle, and this process
adds more alcohol (about 1.3%) and creates CO2 which gets trapped
inside the bottle, making it fizzy.

4. Aging is the next step in order to develop flavors and textures, and the
time duration for aging varies. For example, non-vintage Champagnes
must be aged for at least 15 months, with vintage Champagnes requiring a
minimum of 3 years.

Arrigoni’s rosé and white sparkling wines are meant to be enjoyed young
and fresh, so we age them for at least 6 months.

5. We are getting to the end with the process of riddling that clears the
bottle of dead yeast and disgorging to remove sediments from the bottle.

6. Finally, in the dosage stage, a mixture of wine and sugar is added to fill
the bottles before they are corked.

Tank Method

The tank method differs from the traditional one with the use of a special pressurized tank (also known as the Charmat method). The base wines are added together with the sugar and yeast mixture (tirage) into a large tank. During the second fermentation, the CO2 released causes the tank to pressurize.

Next, the wine goes through filtering to remove sediments, and the dosage stage adds the mixture of wine and sugar. Finally, it is bottled without aging.

Sparkling wines produced with the tank method are known for a fresher, fruitier, and yeasty character with larger bubbles. Prosecco is a well-known sparkling wine produced using this method.

Arrigoni Winery’s Sparkling Wine-Making Process: Homegrown and Made in Our Connecticut Winery

Our Connecticut vineyard sits on 200 acres of beautiful farmland, tucked between Route 66 and the Connecticut River. We grow our own Pinot Noir and Sauvignon Blanc grapes to craft our rosé and white sparkling wines using the tank method—bringing out those fresh, fruity flavors this style is loved for.

Types of Sparkling Wine

Sparkling wine is made all around the world and its organization into types can vary. But the following types are the classics that show up on just about every list.

Champagne
Region: Champagne, France

Crémant
Region: All over France excluding Champagne region

Prosecco
Region: Northeastern Italy

Cava
Region: Penedés, Spain

American (New World) Sparkling Wine
Region: All over U.S. from our home Connecticut to California

English Sparkling Wine
Region: All over England – Kent, Sussex and beyond

Rosé
A small amount of red wine is blended into white sparkling wine before the second fermentation.

Alcohol Content

The alcohol content can influence a wine’s sensory profile. Wines with lower alcohol content, below 12% ABV, can feel lighter on the palate. Higher percentage wines, above 14% ABV, can have full-bodied flavors and heavier mouthfeel.

Sparkling wines can have ABVs of 5.5% – 12%, offering a refreshing and lighter choice. Our Sparklin’ Rozy has 10.8% ABV while Sparkle! is 11.1% ABV.

Sparkling Wine, Champagne, or Prosecco? Let’s Clear Things Up

Talking about sparkling wine can get a little confusing—terms often mix regions, grape varieties, and local names. Let’s break down some of the most common ones to help make things clearer.

Sparkling Wine

Sparkling wine is a category of wine used to describe any wine with significant levels of carbon dioxide in it. It’s usually either white or rosé. Sparkling wines are produced all around the world and are often referred to by their local name or region.

Champagne

Champagne is the most well-known sparkling wine and comes from the Champagne wine region in France. It’s produced using the traditional method.

Champagne accounts for ~8% of worldwide sparkling wine consumption by volume. The Champagne winemaking community developed a comprehensive set of rules and regulations for all wine produced in the region to protect its name and economic interests.

Prosecco

Prosecco is named after the village of Prosecco, in the province of Trieste, Italy. It is made from the Prosecco grape, Glera, but 15% of the wine can be from other grape varieties. It is made using the tank method, making it less expensive to produce.

Prosecco shouldn’t be confused with the term “spumante,” which refers to a whole category of sparkling wines. Spumante, directly translated from Italian, is sparkling, bubbly wine.
